It’s late.  It is hard to believe that it is coming up on 6 PM already and the party guests will be here in a little more than an hour.  There is still a lot of work to be done in the kitchen before they arrive, and I’m starting to panic.

I always panic at the eve of every party I host.

I’m just wired that way.

But looking at the spread of food already laid out on the table in my kitchen, I should feel a lot better.  Almost all of the work has already been done, and I know tonight’s party is going to be a resounding success.

I only have one thing left to prepare for the evening and that is the vegetable tray.  In front of me sits a mound of vegetables just waiting to be cut.  I’m counting on getting it done quickly with my good pairing knife.

It won’t take very long.

But wait… I forgot one thing – the salsa.

That would normally take more time than I have left, but thanks to my recent purchase of one of the best mincing knives on the market, I know that I will be able to make short work of the tomatoes, onions and other ingredients I am going to put in my salsa.

The trick is having the right tools in the kitchen.

I better get everything finished here before the guests arrive – I’m really looking forward to having fun tonight.
